Apple Cinnamon Baked Oatmeal

(Gluten free, Dairy free)

2 c. Gluten free oats 1 tsp. Cinnamon 1 tsp. Baking powder 1/2 tsp. Sea salt 2 c. Water 1/2 c. Unsweetened applesauce 1/4 c. Maple syrup 1 Tb. Chia seeds 1 Tb. Coconut oil 1 tsp. Vanilla 1 c. Apples diced (divided) Preheat oven to 375°. Add all ingredients to a medium size mixing bowl and mix well. Stir in half of the diced apples. Pour into greased 9x13 pan. Sprinkle remaining diced apples over the top. Bake for 40 minutes. Enjoy warm or cooled!
