Avocado, Sweet Potato, Mango Salad

Avocado, Sweet Potato, Mango Salad:

- 2 avocados

- 1 large mango

- 1 large sweet potato

- 1 can black beans

- Green onion (optional)

- Lime juice

- 1 Tbsp cumin

Dice sweet potato and cook at 375 for about 25-30 minutes or until softened, dice avocados and mango and place in mixing bowl, add black beans, add sweet potatoes once cooked, add green onion, squirt lime juice until fully covered, and sprinkle cumin throughout. Mix well & enjoy! Add on the side of any meal, or have it as a snack!
